Our award winning caterers, Blue Strawberry, are constantly testing and trying new dishes, techniques and cuisines from all over the world just so they can bring them back to serve for our lucky event guests. Our team of chefs led by Head Chef; Paulo Ferreira are always looking to push the boundaries and give guests a unique taste sensation whether they are at No.4 for a private party or a business conference as people always remember what they ate!

To give you a chance to take the unique taste of what we do home with you, our wonderful Head Chef Paulo Ferreira has created a recipe card for one of our recent favourite discoveries – a vegan moqueca recipe. The recipe for this vibrant dish has been given a twist by Paulo too so you’ll really be able to impress your guests when you serve it up.

Traditionally, Moqueca is a Brazilian stew made with fish or seafood and hails from Bahia in the north-east of the country. This delicious dish is enriched with coconut milk, spices and palm oil, which gives it a distinctive deep red colour. In our recipe olive oil replaces palm oil as we care about sustainability and the rainforest and while some of the colour may sacrificed, none of the flavour will be and if it helps save the planet we are in.

The recipe’s twist? Fish can be replaced with plantain and jackfruit to make this vegan-friendly! Both of these ingredients are easier to find than you may think with most major supermarket chains stocking them in canned form at least, if not fresh.

We definitely recommend giving this dish a try – it’s quick, straightforward to make and ridiculously tasty so it’s an ideal choice for a week-night dinner fix and include the mango and papaya vinaigrette for some wonderful additional fresh flavours.
